Striped Togo Eggplant aka Striped Toga Eggplant is a beautiful and unique African variety! Prolific plants produce tons of 3 inch long fruit that turn from white/green to deep orange with green stripes when fully ripe. They are traditionally eaten before they change color because they become seedy, but in the west people tend to wait until they change colors. They have a wonderful, slightly bitter flavor profile that is perfect for grilling, frying, sauteing, or pickling! Some people grow these just because for their ornamental value.
