Gai Choi is the most common Chinese Mustard variety! It’s a fast growing, prolific, loose-leaf cultivar that thrives in cooler weather making it perfect for spring and fall planting. It has a unique, spicy, peppery flavor that is often compared to wasabi. Gai Choi is extremely versatile and can be harvested as salad greens (when picked early), pickled, stir-fried, or used in a number of cuisines. We personally love Gai Choi Mustard Greens!
