The leaves mature to the perfect size for baby greens after 35 days and full sized at 50 days. The roots (Beet) are sweet, delicious, and extremely nutritious with good amounts of fiber, protein, vitamin A, vitamin C, magnesium, potassium, and folate. These are perfect for eating fresh in salads, juicing, and pickling!
