Florence Fennel is a delicious Italian heirloom that dates back to at least the 1700’s! All parts of this plant are edible from the seeds to the foliage, though it’s mostly grown for it’s celery like stalk which has a delicate licorice flavor. Fennel is versatile and is fantastic raw in salads, steamed, roasted, in soups, and has numerous other uses. You can use the dried seeds similar to anise which is perfect on fish and the foliage makes a nice tasty garnish!
