Big Jim (aka NuMex Heritage Big Jim) holds the Guinness Book world record as the largest pepper in the world and regularly produces peppers that are over a foot long! It was cultivated by the New Mexico State University breeding program for it’s size, vigor, and flavor. It has a perfect mild heat (up to 3000 Scoville units), which is a less than your average jalapeno. A lot of people pick them green, but they do turn red if left on the vine long enough. They are great stuffed, fried, or fresh!
